Currently this site tracks my progress in eventually opening a brewery. It starts with my optimistic and eager attempt in building a new American driven, brewery, distillery, and smokehouse that expresses my humour, tastes, and desire to share what I believe to be good about America: Southern soul food and BBQ, American style whiskeys, and great beers that are matched with the food. But most importantly the over the top American hospitality and big character. Sitting around dinner tables and sharing foods. Bar staff that remembers your name and a place where everyone knows that the only rules are to have a laugh and be kind to one another.

This site will eventually list all of our beers, spirits, and dishes and where to get them, how to order online and, as we open venues, where you can find us. I will probably putting up a heap of recipes and definitely all my lessons learned both in starting a business and in moving from home brewer and home cook to something more.

Eventually, it will hopefully record my success in building a great venue, people’s favourite food and beers and a place we come together for a great feed and drink. I suppose the site will eventually record my inevitable corruption as greed corrupts us all and I try to horde my successes and blame my failures on others, refusing to acknowledge those who helped me get to where I am. This site will eventually record all of the backstabbing and infighting that will eventually tear the company apart and the eventual decision to sell out to a large beverage conglomerate who will quickly cheapen and destroy the brand leaving another cautionary capitalist tale reminiscent of Citizen Kane.
